Sausage and beans in a tomato sauce is a British and American one-pot supper, close to the tins of beans that came out of industrial kitchens and then went back into a pan with a better sausage. It is weeknight food. The sausage should brown before the liquid goes in.

Bagoong, Mang Tomas, Mama Sita’s, and fresh curry leaves are often missing from the big shops. A Filipino or Asian grocer is the backup. Do not swap bagoong for plain salt and expect the same dish.

Method

    Warm the oil in a wide pot over medium heat. Brown the sausages all over, about 8 minutes. Lift them out and cut each into three.

    Cook the onion in the same pot for 5 minutes. Add the garlic, fennel, and rosemary and stir for 1 minute.

  3. 03

    Add the tomatoes, beans, salt, and the sausages. Simmer for 20 minutes, until the sauce is thick and the sausages are cooked through.

    Stir through the parsley and serve with bread.

Times are a guide. If it needs another minute, give it another minute.

To serve

In a bowl, with toast. It is a one-pot supper.

Keeping it

Cool it and keep it in the fridge for 3 days. It is a straightforward work lunch. Reheat until steaming.
