Before you cook
A crumble is the British answer to a pie when you do not want to make pastry. Fruit goes in a dish, a rubbed-in mixture of flour, butter, and sugar goes on top, and the oven does the rest. Apple is the ordinary fruit for it.

Bagoong, Mang Tomas, Mama Sita’s, and fresh curry leaves are often missing from the big shops. A Filipino or Asian grocer is the backup. Do not swap bagoong for plain salt and expect the same dish.
Method

Heat the oven to 190°C (170°C fan).

Toss the apples with the fruit sugar and cinnamon. Tip them into a baking dish about 20 cm across.

Rub the butter into the flour, oats, and topping sugar until the mix looks like coarse crumbs.

Scatter the crumbs over the apples, leaving a few gaps so steam can escape.

Bake for 30 to 35 minutes, until the top is golden and the fruit is bubbling at the edges.

Rest for 10 minutes before serving.

- 800 g apples, peeled and sliced
- 40 g sugar, for the fruit
- 1 tsp ground cinnamon
- 100 g plain flour
- 40 g rolled oats
- 50 g sugar, for the topping
- 70 g cold butter, cubed
Method
